Potato Leek Soup (Vegetarian + Vegan Option)

There’s something timeless about potato leek soup.

It’s simple, comforting, and deeply nourishing — the kind of recipe that feels like home with every spoonful.

This soup holds a special place in our kitchen. I make it throughout the year, but it always finds its way onto our table in March as we celebrate St. Patrick’s Day and our Irish heritage. It’s cozy, rustic, and full of heart — everything a good comfort dish should be.

What I love most is how versatile it is. You can blend it silky smooth, leave it hearty and chunky, or do a little of both for the perfect balance of texture. It’s also easy to adapt — make it rich and creamy with Gruyère, or keep it fully plant-based with coconut cream and vegan cheese.
Serve it with warm crusty bread, a sprinkle of fresh herbs, and enjoy a bowl of simple, soulful comfort.

Serves 6
Ingredients
2 tbsp butter or olive oil (use oil for vegan)
2 leeks, chopped (tops and most dark green parts removed)
4 large potatoes, chopped
1 onion, chopped
1 clove garlic, crushed or chopped
4 cups vegetable stock
Tarragon or thyme
½ cup cream or coconut cream (for vegan)
Gruyère or Swiss cheese (omit or use plant-based for vegan)

Instructions
Heat butter or oil in a large pot over medium heat.
Sauté onions for a few minutes until softened.
Add garlic and cook for about 30 seconds.
Stir in chopped leeks and continue sautéing a few minutes.
Add herbs and mix well.
Add potatoes and vegetable broth.
Bring to a boil, then reduce heat and simmer about 20 minutes, until potatoes are tender.
Remove from heat.

Optional Texture Step
Use an immersion blender to partially purée the soup, or leave it fully chunky if preferred.
Stir in cream and cheese (omit or use plant-based alternatives for vegan version).
To Serve
Top with fresh herbs and extra cheese if desired.
