Unbelievable Peanut Butter Cookies 🥜🍪

I’ve been using this recipe for over 40 years — ever since I was a little girl in Girl Scouts 🤍

One year, we made a little cookbook together, and this cookie recipe was included. I’ve held onto it ever since because it’s just that good.

These cookies are simple, easy, nostalgic, and somehow always come out perfectly soft, chewy, and delicious every single time.


A Little Peanut Butter Cookie History 🥜


Peanut butter cookies have been a beloved American classic for generations. Peanut butter itself became widely popular in the early 1900s, and by the 1930s, peanut butter cookie recipes began appearing in cookbooks across the country.


The iconic crisscross fork marks became traditional because peanut butter dough is denser than many cookie doughs. Pressing the cookies down helped them bake more evenly — and over time, the pattern became part of their nostalgic charm.


Simple recipes like this one became especially popular during the Great Depression because they used inexpensive pantry ingredients and didn’t require flour or butter. Even today, these old-fashioned cookies remain a favorite because they’re easy to make, naturally gluten-free, and filled with comforting homemade flavor.


Sometimes the simplest recipes become the ones we treasure the longest 🤍



Unbelievable Peanut Butter Cookies

Makes approximately 12 cookies


Ingredients

1 cup creamy peanut butter

(or chunky peanut butter if you prefer extra texture)

1 egg

1 cup sugar



Instructions

Preheat oven to 350°F


In a mixing bowl, whisk together the sugar and egg until well combined


Stir in the peanut butter until a smooth dough forms


Scoop about 1 tablespoon of dough and roll into balls


Place on a lined or lightly greased baking sheet


Gently press each cookie with a fork to create the classic crisscross pattern (optional but traditional!)


Bake for 8–10 minutes


Allow cookies to cool before serving


Enjoy warm with a glass of milk or tucked into a lunchbox for a little nostalgic treat 🤍


Optional Add-Ins & Variations ✨


Mix in mini chocolate chips for a chocolatey twist



Press a chocolate kiss into the center after baking(make a shallow thumbprint before baking if desired)



Add a dollop of your favorite jam for PB&J-style cookies(make a shallow thumbprint before baking using your thumb or the back of a teaspoon)


More than 40 years later, this little Girl Scout recipe is still one of my favorites. It reminds me that the simplest recipes often become the most treasured.
