Recipe

Ingredients


For the Crust:

2 1/2 cups all-purpose flour

3/4 cup confectioners sugar

3/4 tsp salt

1 1/4 cups butter, cubed



For the Filling:

4 cups cherries (or 2 cups cherries + 2 cups blueberries)

2 tbsp cornstarch

1 tbsp lemon juice

1/2 cup sugar (optional, depending on sweetness of fruit)


🍰 Instructions:


Preheat oven to 375°F


Lightly grease a 9x9 pan and line with parchment paper


In a food processor, pulse flour, sugar, and salt


Add butter and pulse until crumbly (like coarse sand) or cut butter in by hand


Set aside 3/4 cup of the mixture


Press the remaining dough evenly into the pan


Bake crust for 12 minutes, then remove from oven


In a bowl, mix cherries (and blueberries if using), cornstarch, lemon juice, and sugar


Spread fruit mixture over the warm crust


Crumble the reserved dough evenly over the top


Bake for 25–30 minutes, until golden and bubbly


Let cool completely before slicing into bars
