Golden Raisin Irish Soda Bread Muffins

If you love classic Irish soda bread but want something a little quicker and perfectly portioned, these golden raisin soda bread muffins are such a treat.



They have that signature tender crumb and subtle sweetness, with bursts of juicy golden raisins in every bite.



They’re especially lovely to bake in March as we lean into St. Patrick’s Day traditions, but honestly, they’re perfect anytime you want a simple, cozy bake without the fuss of yeast.



Serve them warm with butter, a drizzle of honey, or alongside a cup of tea for the ultimate comforting moment.


Golden Raisin Irish Soda Bread Muffins Recipe - Makes 12 muffins


Ingredients:


2 cups all-purpose flour

3 tablespoons + 1 teaspoon granulated sugar

3/4 teaspoon baking soda

1½ teaspoon salt

1/8 teaspoon ground cloves

3/4 cup golden raisins

1 large egg

1 cup reduced fat buttermilk

2 tablespoons unsalted butter, melted



Instructions

Preheat oven to 375°F (190°C) grease muffin tin.



In large bowl, whisk flour, 3 tablespoons sugar, baking soda, salt and cloves; stir in raisins .


In medium bowl, whisk egg, buttermilk, and butter.



Add flour mixture to buttermilk mixture stir just until combined.



Divide dough into prepared muffin tin; sprinkle with remaining 1 teaspoon sugar.



Bake muffins approximately 15 minutes or until golden brown and toothpick inserted in center of muffins comes out clean; cool 10 minutes in pan on wire rack.
