Bake Time: 55–60 minutes

Yields: 1 loaf (about 12 slices)


Ingredients:


1 1/2 cups tart apples (like Granny Smith), peeled & finely chopped

1 cup plain Greek yogurt (full-fat or 2%)

2 cups all-purpose flour

1 cup granulated sugar (or reduce slightly for less sweetness)

2 eggs

1/2 cup melted butter or oil

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1 1/2 tsp cinnamon

1/2 tsp salt


Optional topping: cinnamon + sugar sprinkle



🍞 Instructions:


Preheat oven to 350°F and grease a loaf pan


In a large bowl, whisk together sugar, yogurt, eggs, melted butter (or oil), and vanilla until smooth and creamy


Sprinkle in baking powder, baking soda, cinnamon, and salt. Whisk to combine


Gently stir in the flour until just combined—do not overmix


Fold in chopped apples


Pour batter into prepared pan and sprinkle with cinnamon sugar if using


Bake for 55–60 minutes, or until a toothpick comes out clean
