Summer-Inspired Vegan Sandwich Recipe: Bánh Mì Bliss

Golden tofu, tangy pickled veggies, creamy mayo, fresh herbs… all tucked into a warm toasted ciabatta roll = the ultimate plant-based Bánh Mì 🥖✨

Tofu Bánh Mì with Pickled Veggies & Fresh Herbs


A vibrant, plant-powered twist on the Vietnamese classic—packed with flavor, crunch, and all the fresh herbs you love.

Ingredients:


Tofu

1 (14-ounce) block extra-firm high-protein tofu, drained & sliced into 8 slabs

Pickled Veggies

Vietnamese-style pickled vegetables with fresh cucumber & jalapeños


Mayo or Spicy Mayo (optional)

1/4 cup vegan mayonnaise

1 Tbsp Sriracha



Marinade

1/4 cup low-sodium soy sauce

2 Tbsp sesame oil

2 Tbsp maple syrup

3 cloves garlic, peeled

3-inch piece lemongrass, roughly chopped (or lemon & lime juice/zest)

1/2-inch piece fresh ginger

1/3 cup cilantro, leaves & tender stems, roughly chopped

3/4 tsp kosher salt

1/2 tsp freshly ground black pepper



For Sandwiches

4 ciabatta rolls, halved & toasted

2 cups cilantro leaves

1 cup fresh basil leaves

Instructions:


1. Dry the tofu: Line a baking sheet with paper towels. Lay tofu slabs on top to dry.



2. Spicy mayo (optional): Mix mayo + Sriracha in a small bowl, or use just plain mayo.



3. Make the marinade: In a blender or using an immersion blender, combine soy sauce, sesame oil, maple syrup, garlic, lemongrass (or citrus zest/juice), ginger, cilantro, salt, and pepper until smooth.



4. Marinate tofu: Place tofu on a plate. Pour marinade over and coat evenly. Let sit for at least 2 minutes.



5. Cook tofu: Heat oil in a skillet over medium heat. Shake off excess marinade and pan-fry tofu until golden, about 3 minutes per side (it will release when ready). Return cooked tofu to marinade for at least 10 minutes to soak up extra flavor.



6. Assemble sandwiches: Spread toasted ciabatta rolls with mayo or spicy mayo. Layer with tofu, pickled vegetables, cucumber, jalapeños, cilantro, and basil.



7. Serve & enjoy: Slice in half, take a big crunchy bite, and savor the plant-based goodness! 🌱💚
