A simple vegetarian holiday favorite.

The holidays are a beautiful reminder that food doesn’t need to be complicated to feel special.

These Herbed Goat Cheese Stuffed Mushrooms are one of my favorite plant-forward appetizers — cozy, flavorful, and effortlessly elegant.

Earthy mushrooms are filled with creamy goat cheese and fragrant herbs, then baked until golden and bubbly.

They’re perfect for holiday gatherings, dinner parties, or a quiet night at home when you want something warm and comforting without spending hours in the kitchen.

Ingredients
6 Portobellini mushrooms
8 oz Crimini mushrooms
8 oz goat cheese
3 tbsp mixed dried herbs (I used Trader Joe’s Green Goddess blend)
Olive oil
Salt & pepper

How to Make:
1. Preheat oven to 425°
2. Clean and prep mushrooms, removing stems if needed
3. Brush mushroom caps lightly with olive oil
4. Mix goat cheese and dried herbs until well combined
5. Fill each mushroom generously with the cheese mixture
6. Place on a baking sheet
7. Bake for about 10 minutes, until bubbly and lightly golden
8. Season with salt & pepper
9. Serve warm and enjoy ✨
