Zucchini, but Make it Dessert!

I love zucchini, how about you? I love it in savory dishes, but especially love baking with it!


Zucchini, but make it dessert! 💚Bread, bars, muffins & cookies. 4 veggie-packed treats are serving dessert. Who says greens can't be dessert?


So this summer when you have zucchini and you want to try something different, give one of these 4 recipes a try!



I use one basic recipe for the bread and muffins that can make 2 zucchini bread or 48 muffins.


Take the base recipe and pick your favorite add-ins , toppings, glazes or frosting, if you like.


For the bars I used a slightly different recipe for the base and made an orange thyme glaze for the topping, which was absolutely delicious!


For the bread I choose to keep it simple, and didn't add in anything or top it with anything, it's that delicious.


As for the muffins I went all out and mixed in chocolate chips and chopped nuts, and also topped them with a little of the same, which made the muffins the perfect blend of sweet and savory.


To make the Zucchini bread follow this recipe:


Yields 2 loaves

3 cups grated zucchini

4 eggs

2/3 cup vegetable oil

1 cup sugar

2 teaspoons vanilla

3 cups flour

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon baking powder


How to prepare :


Grease and flour 2 - 8x4 inch loaf pans


Preheat oven to 325°


Beat eggs and sugar then oil


Mix in the zucchini and vanilla


Combine flour, baking soda, salt, cinnamon, and baking powder - mix well


Then add the dry ingredients to the zucchini mix and mix until combined.


Pour into pans and bake for approximately 60-70 minutes or until a toothpick inserted in the middle comes out clean


Reheat or toast serve with butter or orange jam.

How to make bars:


1 cup white sugar

1/2 cup oil

2 large eggs, beaten

1 teaspoon salt

1 1/4 cups grated zucchini

1 cup all-purpose flour

1 teaspoon baking soda

3/4 teaspoon ground cinnamon


Preheat the oven to 350 °


Beat together sugar, oil, eggs, and salt in a large bowl until creamy


Add zucchini and mix until blended


Add flour, baking soda, and cinnamon; beat until batter is smooth


Pour batter into an ungreased 9x12-inch baking dish


Bake until a toothpick inserted into the center of cake comes out dry, about 20 minutes


Orange Thyme glaze:


Powdered sugar: 2 to 3 cups


Fresh squeezed Orange juice: 2 -3 tablespoons plus 1 - 2 teaspoon Orange zest


Fresh thyme: A few sprigs cleaned and chopped


Combine Ingredients: In a medium bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth


Stir in the fresh thyme


Adjust Consistency: If the glaze is too thick, add more orange juice, a teaspoon at a time, until you reach your desired consistency. If it's too thin, whisk in a tablespoon more powdered sugar.


Drizzle the glaze over the cooled bars and enjoy!


Orange Thyme Glazed Zucchini bars



Zucchini Chocolate chip Nut muffins


Muffin recipe:


3 cups grated zucchini

4 eggs

2/3 cup vegetable oil

1 cup sugar

2 teaspoons vanilla

3 cups flour

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon baking powder

I also added in 1/2 cup chopped nuts and 1/4 cup chopped dark chocolate



How to prepare :


Mix zucchini eggs oil sugar and vanilla


Then add in flour baking soda salt cinnamon and baking powder mix well


Last stir in nuts and chocolate (save a little to sprinkle on top too)


Pour into muffin pan



Bake at 350° for 20 to 25 minutes


Makes 48 muffins



Zucchini cookies - Two Ways

Zucchini cookies with oats


1 cup Zucchini

1 cup Peanut butter

1/4 cup Maple syrup

1 cup Oats (optional)

1/3 cup unsweetened apple sauce or 1/3 cup mashed banana

1 teaspoon vanilla

1/2 teaspoon cinnamon



With oats


Mix all ingredients together


Preheat oven to 350°


Without oats


Drop by spoonfuls onto cookie sheet


Bake for 10 -12 minutes for small cookies or 12 -15 minutes for large cookies
