Here's 5 fun ways to enjoy Strawberries This Valentine's
1. Strawberry jam - I like to make this quick & easy refrigerator jam, most of the time, but every once in a while I'll go ahead and pull out all my canning supplies and go all out, but if you're like me, and want to make 1 or 2 jars quickly then, refrigerator jam is the way to go!
Ingredients:
1 to 2 lbs strawberries
1 1/2 cups to 3 cups sugar (depending on how many strawberries used and how thick you like your jam, less sugar = thinner jam more sugar = thicker jam)
2 tbs fresh lemon or lime juice
How to prepare:
Clean and dice strawberries
Put into med pot
Bring to a boil and add in lemon juice
Continue to slow boil for 10 to 15 minutes stirring frequently
Once the jam thickens up, turn it off and let it cool a few minutes
Pour into a Mason jar, tightly cover and refrigerate, And enjoy! Lasts from 2 to 4 weeks, depending on how well it's kept sealed and refrigerated
2. Strawberry bread/bars
Homemade Cinnamon Strawberry bread & Cinnamon Strawberry bars topped with a Strawberry Vanilla sugar glaze #healthyeats Taking a lil break from all the zucchini baked goods I've been making & before I start baking all things pumpkin, I decided to make some strawberry bread & strawberry bars using my favorite strawberries from one of my favorite local farms Nye Ranch.

Cinnamon Strawberry bread/bars
16 oz strawberries
2 cups sugar
1 1/4 cup vegetable oil
4 eggs
3 cups all-purpose flour
3 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
Slightly mash strawberries and set aside
In large bowl mix sugar and oil
Stir eggs into sugar and oil and mix well Add strawberries in and mix well
Next add in all other ingredients and mix just until combined
Pour batter into loaf pan and a square cake pan recipe makes 2 loaves or 1 loaf and one batch bars
Bake at 350°
For loaf - 1 hour to 1 hour and 10 minutes
For bars - 25 to 30 mins
Let cool and then top them with a #strawberrysugarglaze (optional)
2 cups confectioners sugar
diced strawberries
1 teaspoon vanilla
3 to 4 tablespoons of water
Mix sugar water vanilla until creamy mix in diced strawberries pour over bread and bars and Enjoy!
3. Chocolate dipped Strawberries
These are so quick and easy to make and they always look amazing + they're kid friendly too if you have little ones who want to help
All you need is:
Fresh strawberries washed and dried
Melted chocolate
You can dip and/or drizzle
And for added fun you can sprinkle with mini chocolate chips or colored sprinkles, chopped nuts, toasted coconut
Let chill in the refrigerator until ready to enjoy!
4. Strawberry Cheesecake
Three Ingredient Strawberry Cheesecake
As a busy mom over the years I've created lots of 3 to 5 ingredient meals & desserts to have in my cooking repertoire
One of my go-to recipes is this delicious Strawberry Cheesecake which is easy enough for the kids to help make too
With just three ingredients, minimal prep and no baking it's a busy mom's dream dessert + it's always a total show stopper perfect for any special occasion
To make:
1 Trader Joe's NY style cheesecake
1 jar of Trader Joe's strawberry jam
1 basket of Trader Joe's strawberries
1/4 cup water
Put cheesecake on a plate
Mix 1/2 jar of strawberry jam with enough water to make the jam the consistency of a thick syrup
Pour over cheesecake
Slice strawberries & decorate

5. Strawberry Toast
A simple meal made even better with next level ingredients. For the toast I used an amazing colorful bread made locally, Hasi bread, I recently discovered this delicious bread at my local farmers market in LA it's made with blue pea flower & turmeric root which gives it the beautiful blue & yellow colors.
For the base I made a quick peanut butter and honey spread I used 1 tbsp peanut butter & 1 tsp honey stirred them together and then spread it all over the bread
Strawberries are from a favorite local farm in Mendocino Nye Ranch
For the topping I used a 1/2 cup of a crunchy Ginger Turmeric Granola that I crushed up & then sprinkled on top another delicious and healthy Trader Joe's finds.
Definitely will be making this delicious healthy Strawberry toast again!

Strawberries are on the dirty dozen list so it's a food to buy organic, they can be as low as $3.99 for 16 oz when they do go on sale, so buy extra and wash and dry them and then store them in freezer bags in the freezer for later.
